Chef Jean-Marie Josselin conjures up delightfully unique Euro-Pacific cuisine in a deft combination of Japanese, Chinese, Thai, Indian, and French cooking. A resident of the Vegas strip’s Caesar’s Palace for eight years, 808 is conveniently set in the main building of the hotel’s first floor yet away from the noisome casino crowd.
Diners can delight in an eclectic and delectable menu of inventive fish and meat appetizers and entrees while immersed in 808’s Japanese-inspired ambience of soothing neutral colors and artful aquatic imagery.
